Who we are

Delekta is an innovative start-up founded with the aim of designing, developing, and transferring advanced skills in the production of processed foods with high nutritional and sensorial value. At the heart of our business is the development of processes and products based on the use of microorganisms that are beneficial to plants, animals, humans, and the environment.

In line with growing consumer awareness of a healthy, balanced, and environmentally friendly lifestyle, Delekta designs products, preparations, and substances for the food industry. We also provide specialized consulting for the development of innovative microbial starters for the agri-food and environmental sectors.

Furthermore, Delekta offers microbiological analysis and environmental sustainability services for the entire agri-food supply chain. We support companies in the conscious use of ingredients and in the design and development of new products and production processes, offering assistance in the development and optimization of fermentation processes, as well as in the design of dedicated plants and equipment.

Our objectives include:

  • the integration of innovative methods and alternative ingredients to improve transformation and fermentation processes and the nutritional profile of products, with particular reference to fermented foods;

  • the development of useful microbial systems “from field to fork” to increase the productivity and sustainability of agri-food production, reducing environmental impact and promoting well-being;

  • the provision of comprehensive traceability and documentation services on ingredient sourcing and production cycles, in compliance with food regulations and sustainability standards;

  • the development of detailed nutritional analyses and balanced formulas for the finished product.

In keeping with the pillars of Industry 5.0—human centrality, sustainability, and resilience—Delekta integrates creativity, scientific and artisanal skills, industrial strategies, and innovative technologies, placing people and the environment at the heart of every production process.

Where We Operate

The administrative headquarters of Delekta is in Rieti, at the Research Center for Innovation on Circular Economy and Health.
Research and development activities and prototype development are carried out between Rieti and Viterbo, in facilities provided by the Consortium for Industrial Development of Lazio (Rieti) and by the DIBAF and CGA of the University of Tuscia (Viterbo), in an ecosystem that fosters scientific collaboration, technology transfer, and sustainable innovation.
